How do I turn off the keyboard animation that makes the characters pop up?

The feature that causes the letters to pop up when you tap them is called "Character Preview." It's fairly innocuous, but if it bothers you for some reason you can turn it off. Head to Settings -> General -> Keyboards and toggle off Character Preview in the All Keyboards section.
