Why does my iPhone Gmail say archive instead of delete?
Apple has added support for Gmail's archive feature with iOS 4. When swiping across a message you wish to delete, the red button that appears says archive instead of delete.
To disable Gmail archiving for an account, follow these steps:
1. Navigate to Settings -> Mail, Contacts, Calendars
2. Select the Gmail account you want to change from archive to delete
3. Touch Archive Messages -> OFF

My phone also doesn't have the archive off button in settings. There is nothing that mentions archive at all, across all my settings. I have the latest iPhone and iOS.

You need to go into advanced dude.
Steps:
You can change this settings in the Settings app for Gmail if you want to move discarded messages to the deleted mailbox (Settings > Mail, Contacts, Calendar > [Account name] > Account > Advanced – Deleted Mailbox/Archived Mailbox under Move Discarded Messages Into: section).

Thanks so much for this info.
Can you tell me whether the old "archived" messages will disappear from my phone or whether I need to delete them. If I need to delete, how do I do this? I want to free up space on my phone.
